Spectroscopy, traceability or process data : how to predict the aromatic potential of grapes?
Objective : The French Technical Institute for Grapes Wine in the Midi-Pyrénées region (ITV MP) wanted to assess the aromatic potential of grapes to produce specific aromas during the making of single-variety wines. Their aim was to develop an innovative tool that could quickly assess the aromatic potential of grapes at the winery.
Our solutions : ITV MP chose grape samples and gathered important information on them such as vineyard traceability characteristics used before scanning the grapes using mid-infrared spectrometers. Ondalys performed multivariate data analysis to correlate these measurements with real grape aroma potential as defined by a sensory panel after wine testing.
Customer benefits: This study helped ITV to identify and understand the critical factors affecting the aromatic potential of grapes and the development of wine aromas. ITV can now provide the wineries with a tool capable of real-time characterization of the aromatic potential of grapes. This solution means that the wine-making process can be adapted to raw material quality and that wines tailored to the needs of international markets can be more easily produced.
Innovation and pragmatism: making the most of the wealth of information contained in the database led to a significant gain in knowledge and know-how. This expertise was then used to develop a powerful decision-aid tool, leading to much better returns on investment.
