The Third Symposium on Fruit and Vegetable Processing will be held from 24th and 25th of November 2020 as a web conference.

Her oral will present Ondalys and B.I.P. – Bureau Interprofessionnel du Pruneau ‘s works on how characterizing the maturity of the plums at harvest using Near Infrared Spectroscopy in order to adapt the drying process for transformation into prunes
